In ESCO 1L kettle, add all ingredients to kettle except Structure Cel 500 HM rheology modifier and begin mixing with sweep mixer and homogenizer speed set at 20. Begin heating to 80-85°C with water bath attachment to jacketed kettle ports. Sprinkle in Structure Cel 500 HM rheology modifier slowly and mix until fully dispersed. Once phase A reaches 80-85°C, add each phase B ingredients to the main kettle one at a time, mixing between additions until dispersed/dissolved. Hold batch temperature at 80-85°C. Once all phase B ingredients are added and fully incorporated into the batch, add Phase C ingredients to the main kettle. Homogenize with sweep mixing for 10 minutes at speed 30-40. Hold batch temperature at 80-85°C, then begin cooling batch down to 45°C after 10 minutes. Once batch reaches 45°C, add phase D and homogenize with sweep mixing at speed 30-40 until fully incorporated into formula. Mix only with sweep mixer at speed 10 and begin to pull vacuum at 4-6 psi (be careful not to suck formula through vacuum hose). Cool batch down to 25°C.
